= Lentil Tomato Soep = == Ingredients == ||4 cm||ginger root|| ||25 g||coriander leaves|| ||150 g||red lentils|| ||1||onion|| ||1 tbsp||mild curry|| ||pinch||chilly|| ||2 cloves||garlic|| ||1 tin (400g)||chopped tomato|| ||1 tin (400g)||coconut cream|| == Preparation == Peel the ginger root and finely chop it. Wash and chop the coriander leaves. Wash the lentils. Stir fry the onion in a bit of oil for 8 minutes until it's caramelized. Add curry powder, garlic, ginger and chilly powder and fry for another 2 minutes. Put the lentils in the pan, stir one minute before adding the tomatoes, one tablespoon of the coriander, 600 ml of water and 1 tea spoon of salt. Add pepper according to taste. Add the coconut cream and bring to a boil. Let it boil gently for another 25 minutes. Serve with sprinkled coriander.
